Impromptu Sweet Italian Pasta

Per a request from Alex for something for dinner containing sweet Italian sausage, chicken breast, and creamy white sauce over angel hair pasta, I scoured the internet for recipes that would fit, but included only ingredients we had on hand. I didn’t find anything that was exactly right, but I did find a recipe for a creamy red sauce that incorporated all of the other ingredients. Below is my rendition of it.

1/2 chopped sweet red onion
1 chicken breast, thawed and cut into 1/2″ cubes
2 links sweet Italian sausage, cut into discs then into quarters
1 can Contadina stewed tomatoes
1 can Contadina tomato sauce
Rosemary Sprigs*
Spicy Globe Basil*
14 oz chicken broth
8 oz cream cheese

*to taste

Add onion and a little olive oil to large pan, cook till clear. Remove onion from pan, set aside. Cook sausage and chicken till just cooked through, remove and set aside. Pour tomatoes and sauce into pan, add cooked onions, basil, rosemary, and broth. Cook on medium heat till simmering, or low until almost ready to serve. (I had to cook on low while Alex did his run.) Add cream cheese, cook on low or turn off heat. Press cheese with back of a spoon until completely mixed into the sauce. Add meat to sauce.

Prepare pasta of choice. Serve sauce over pasta with a sprig of basil.
